Got a glut of tomatoes?

piles of varied tomatoes

If you're lucky enough to have had a bumper harvest of tomatoes, you might be thinking that 'Gardener's Delight' isn't so delightful any more, as you wonder what you're going to do with all those tomatoes.

Save the seed

Although the last thing on your mind is probably growing yet more tomatoes, you can save yourself some cash by saving seed from this year's tomatoes to sow for next year's crop. And here's how...

Set up a swap

Your friends and neighbours might have more than they know what to do with of another vegetable. Give them a box of your tomatoes in exchange for a box of other produce.

Get cooking

Once you've eaten all your favourite fresh tomato recipes (like tomato, mozzarella and avocado salad, yum), you need to get cooking, to create delicious tomato treats to see you through the coming months.

Make your own sundried tomatoes
Pricey to buy, these are easy to make. Pick unblemished fruit with a deep red colour. Halve and place on a baking tray, cut side up. Sprinkle with salt and sugar and put in the oven at gas mark 1/140˚C (130˚C in a fan oven) for 2-3 hrs. Spoon into sterilised jars, and top up with olive oil. And here are 10 ways to use your sundried tomatoes.

Make tomato sauce
Use your favourite recipe or try this fresh tomato sauce recipe. Once made, freeze the sauce to use on its own, or as the basis for more complex dishes.
