WARM CHINESE BEEF SALAD RECIPE
EASY CHINESE NEW YEAR RECIPES

  • 2  sirloin steaks, sliced into strips
  • 2 teaspoon(s) sesame oil
  • 1 tablespoon(s) soy sauce
  • 1 tablespoon(s) sherry
  • 1 teaspoon(s) sugar
  • 1 teaspoon(s) cornflour
  • 2 tablespoon(s) vegetable oil
  • 250 gram(s) pack medium egg noodles
  • 3-4 stalks celery, thinly sliced
  • 2 clove(s) garlic, sliced
  • 150g/5oz shiitake mushrooms, sliced
  • 150ml/5fl oz hot beef stock
  • 1  fresh red chilli, finely chopped
  • coriander leaves, to serve

Method

  1. In a bowl, add beef, then sesame oil, soy sauce, sherry, sugar and cornflour. Mix well and leave to marinate for 15-20 mins.
  2. Heat vegetable oil in a wok till hot, then add beef. You may need to do this in batches so as not to overcrowd the pan - you want the beef to fast-fry, not steam. Cook for 2-3 mins, till well coloured, then remove and leave to one side. Cook noodles as per pack instructions, drain and leave to one side.
  3. Now add celery to pan and fry quickly for 2 mins. Throw in garlic and stir well, then add mushrooms. Continue to fry till mushrooms begin to colour, and add a little stock. Bring to boil and bubble for 2 mins, so sauce thickens and reduces slightly, return beef to pan, then gradually add remaining stock. Add noodles to pan, stir and cook till warmed through. Serve immediately, garnished with chopped red chilli and coriander.
