EASY CHERRY JAM RECIPE

  • 900g/2lb black cherries, pitted
  • juice of 2 lemons
  • 900g/2lb jam sugar, with added pectin

Method

  1. Put cherries into a large pan or preserving pan, pour in 100ml/4fl oz water and cook till soft - about 5-10 mins, depending on how ripe your cherries are. Remove from heat.
  2. Add lemon juice and stir in sugar. Put pan back on heat and continue stirring till sugar has dissolved, then bring to the boil. Cook at a rolling boil till it reaches setting point (see tip, right) about 10 mins. Spoon into sterilised jars, seal and label.
  3. Keeps for up to 6 months before opening.
