Easy cheap dinner recipes: veggie frittata
You can add whatever veg you have knocking about your fridge to this flavoursome budget meal

Adding lots of veg to this frittata makes a box of eggs go that bit further and creates a tasty, easy budget meal. Replace the feta with a supermarket own-brand Greek cheese to help keep the cost down.

Preheat the oven to 190°C/170°C fan oven, gas mark 5. Chop 1 medium head of broccoli (around 350g), including the stalk, into bite-size pieces. Steam in a pan with a little water until tender. Add 150g frozen peas for the last 2 minutes. Drain well and set aside.
- Beat 6 large eggs with ¼ tsp cayenne and season well. Stir in 2 finely chopped spring onions, 100g chopped feta and the broccoli and peas. Spoon into a 20cm lined cake tin and bake for 40-50 minutes.
Vary the recipe
Swap the feta for ricotta and stir into the egg mixture along with a small handful of chopped basil.
