Easy cheap dinner recipes: sardines with a crisp coleslaw
This underrated fish with tangy coleslaw on the side makes a great cheap supper!

Sardines are the bargain of the fish counter and take minutes to cook. Just fry in a pan with a little oil or grill until golden and crisp.
Serves 4
- For the coleslaw, halve and quarter 1 small red cabbage (about 350g) then finely slice and put in a bowl. Add ½ finely sliced red cabbage and 1 finely sliced red cabbage. Use a mandolin for the veg prep here if you have one.
- Whisk together 1 tbsp mayonnaise, 2 tbsp extra virgin olive oil and the juice of 1 small lemon. Season well, then pour over the cabbage mixture and mix well.
- Preheat the grill. Lay 8 descaled and filleted sardines on a baking sheet and grill for 2-3 minutes each side until the flesh is opaque.
- Stir 2 tbsp freshly chopped parsley into the coleslaw and serve with the sardines and crispy bread.
Vary the recipe
Add 200g steamed, chopped salad potatoes and 1 tsp wholegrain mustard to the coleslaw for a warm salad alternative.
