Easy cheap dinner recipes: sausages and roast vegetables with crispy kale
This super-easy cheap and colourful sausage supper recipe is a wonderful one-pan dish.

Roasting your vegetables along with sausages and herbs makes for a tasty and very budget conscious supper - master this handy, clever recipe and we're sure you'll be making variations of it for a long time to come!
Serves 4
- Preheat the oven to 190°C/170°C fan oven/gas mark 5.
- Thickly slice the following vegetables: 600g baking potatoes, 1 large onion, 400g squash and 275g celeriac. Put in a roasting tin lined with baking parchment. Measure 250ml water in a jug and stir in 2 sprigs chopped rosemary and 2tbsp olive oil. Pour over the vegetables and season well. Roast for 30 minutes.
- Add 6-8 Cumberland sausages and continue to roast for 25 minutes.
- After 15 minutes, scatter a large handful of chopped kale over the top and finishing off cooking. Serve with a dollop of mustard or chutney on the side.
Vary the recipe
Use spicy Italian sausages and swap the celeriac for 1 red pepper, deseeded and cut into wedges. Omit the kale and add a large handful of halved cherry tomatoes for the last 10 minutes of cooking.
