Easy recipes for life - part six: cooking chicken breast
It's not easy to cook chicken breast and have it end up succulent, unless you know our easy to remember method , in which case you won't need a cookbook to cook chicken breasts ever again! Plus we've got brilliant tips and how to adapt the basic recipe.

The principle
To slice chicken breast, marinade it, and then grill it until golden, juicy and still tender.
Basic grilled chicken breast recipe
Place boneless, skinless chicken breasts in a sealable container with (per chicken breast) 1tsp olive oil, the zest and juice of quarter of a lemon, two sprigs thyme or rosemary and 1 tbsp dry white wine. Marinate for about 30 minutes. Preheat the grill to medium high and grill for around 8 minutes on each side. To check its cooked, pierce the thickest part of the meat and look inside to ensure the juices are clear and the meat is cooked through.

Finishing touches and adding flavour
- Just before cooking, brush a finely ground paste of salt and black peppercorns all over the chicken. Do the same with allspice, chilli flakes or paprika.
- Sprinkle with seeded crumbs. Whiz stale bread in a food processor to make breadcrumbs. Heat a little oil in a frying pan, then toast the bread until golden and crisp, adding a teaspoon of sesame seeds, poppy seeds and sunflower seeds for the last few minutes. Stir in a tablespoon of freshly chopped parsley just before serving then scatter over the cooked chicken.
- Serve with your own homemade grainy mustard mayo: stir together a couple of tablespoons of ready-made mayonnaise with a little grainy mustard and a squeeze of lemon juice.
