Ingredients

  • 250g/9oz plain flour
  • 250g/9oz wholemeal flour
  • 1 tsp brown sugar
  • 1½ tsp bicarbonate of soda
  • 25g/1oz butter, softened
  • 150g/5oz rolled oats, regular or jumbo
  • 1 tbsp black treacle
  • 500ml/20fl oz buttermilk and milk (use a 300ml carton buttermilk and top up with milk)

Method

  1. Preheat oven to gas mark 6/200°C (180°C in a fan oven). Add plain and wholemeal flour to a large bowl. Add a pinch of sea salt and stir in sugar and bicarbonate of soda.
  2. Add butter and rub it in with your fingertips until combined. Stir in oats and add black treacle and buttermilk with milk and work it together with your hands until it all comes together. It will be very wet.
  3. Flour your hands and flour a board, then transfer dough to board and shape into a round. Scrape it up and sit in onto baking sheet. Mark a cross on top of loaf, sprinkle with a little flour then bake for about 30-35 mins until golden and base feels hollow when tapped. Remove from tin and put on a wire rack to cool. Slice before serving.
